Egyptian food is a mixture of Greek, Turkish, Iranian, Lebanese and French cuisine with a prevailing Mediterranean influence modified to suit local tastes. Freshness of the ingredients is a major factor in Egyptian cooking so the fruit and vegetables vary according to the season, the French call it “cuisine du Marché.” Since Egypt was once the center of the world’s spice market, the food is also beautifully seasoned. The major staples are bread (aish) and fuul (pronounced ‘fool’), a spicy fava bean mixture. | |
